Loaded Cheese Nachos at Home in 15 Minutes
8 October 2026
Loaded nachos are a party favourite: crunchy chips, beans, veggies and melted cheese. A shake of Grella Mexican on top adds warm, Mexican style spice to every chip.
What you need (serves 3 to 4)
- 1 large pack of nachos or tortilla chips
- Half a cup of boiled rajma or baked beans
- 1 onion, 1 tomato and 1 capsicum, chopped
- A handful of sweet corn
- 1 cup grated cheese
- 2 teaspoons Mexican cheese seasoning, plus more to taste
- Salsa, sour cream or hung curd to serve (optional)
Method
- Mix the beans, onion, tomato, capsicum and corn with 1 teaspoon of the seasoning.
- Spread the chips on an oven tray or a wide pan.
- Spoon the bean mix over the chips and cover with the grated cheese.
- Oven: bake at 200 °C for 5 to 7 minutes until the cheese melts. Pan: cover with a lid and heat on low for 4 to 5 minutes.
- Shake on the rest of the seasoning and serve straight away with salsa or curd dip.
Tips
- Serve straight away. Nachos lose their crunch if they sit.
- For extra heat, use Grella Jalapeno or Grella Chilli instead.
- No time to bake? Just shake the seasoning straight onto a bowl of chips.
